Kid-Friendly High-Protein Mac & Cheese

Getting kids to eat a balanced meal can be challenging, especially if they’re not fans of veggies or unfamiliar ingredients. That’s where this easy Mac & Cheese recipe comes to the rescue! This recipe is creamy, cheesy, and packed with hidden protein that even the pickiest eaters won’t notice. One trick? Use a boxed mac and cheese! This way, you can blend some cottage cheese right into the cheese packet for a smooth and velvety texture. And don’t worry—you can’t taste the cottage cheese after it’s blended. To bump up the fiber, you can toss in some vegetables your kids already enjoy, like peas, carrots, or cauliflower. It’s totally optional, so feel free to skip the veggies if your little ones prefer their mac and cheese plain!

Whether they’re picking the pasta shape, stirring the sauce, or sprinkling in extra cheese, involving them in the process can spark their curiosity and make them excited to dig in. Call it “Superhero Mac” or “Power-Up Pasta” to emphasize how it’ll give them strong muscles or fuel their energy for playtime. With a bit of creativity and fun, this dish can become a family favorite while sneaking in all the nutrition kids need!

When it comes to choosing the perfect mac and cheese for you and your family, plenty of options combine deliciousness with better ingredients, making it a win-win for both kids and parents. If you’re looking for a brand that kids already know and love but still want better ingredients, try Annie’s Homegrown, known for using organic pasta and real cheese without artificial flavors. Another great option is Good & Gather Organic Macaroni and Cheese, a widely available and budget-friendly choice at Target that delivers quality ingredients without compromising on taste. If your little one is more adventurous or for a teen or old kid, try high-protein boxed mac and cheese!  Some of my favorite high-protein boxed mac and cheese are Banza, Goodles, and Annie’s Super Mac.

Why Cottage Cheese?

Cottage cheese adds a velvety texture to the cheese sauce and packs in high-quality protein to keep everyone feeling full and satisfied. It’s also low in fat and rich in calcium, making it a healthier alternative to heavy cream or butter. After blending it with the cheese packet, the cottage cheese becomes so smooth and creamy that even picky eaters won’t notice it’s there. 

Instructions:

  1. Bring a pot of water to a boil. Cook the macaroni according to package instructions.

  2. Add the broccoli (or other veggies) to the boiling pasta water during the last 2–3 minutes of cooking. Drain and set aside.

  3. Combine the cheese packet with cottage cheese and milk or water in a blender or food processor. Blend until smooth and creamy.

  4. Return the cooked pasta and veggies to the pot. Pour the blended cheese mixture over the pasta and stir to combine. If desired, add olive oil or butter for extra richness. Taste and adjust with salt and pepper as needed. 

  5. Serve warm and enjoy your high-protein, high-fiber comfort meal!

Ingredients:

  • 1 box Mac & Cheese (choose your favorite flavor!)

  • 1 cup cottage cheese (low-fat or regular)

  • 1–2 cups broccoli florets (or your choice of veggies: spinach, peas, or cauliflower work well) Feel free to leave out the veggies if your little ones aren’t fans. This recipe is still delicious and nutritious without them!

  • ¼ cup of milk or ¼ cup of water (for a creamier texture)

  • 1 tablespoon olive oil or butter (optional, for added richness)

  • Salt and pepper to taste
