I have a dear friend who is more like a sister who recently obtained her Master’s degree in teaching. She is the first one in her family to obtain a graduate-level degree and so this was a big deal! If any of you have ever made a career change later on in life, you know how stressful it can be! My friend became so stressed balancing a full-time job as a teacher and grad school, that it took a toll on her health. As a result, she is currently doing an elimination diet to try and pinpoint any trigger foods. This means she is not eating gluten, dairy, wheat, soy, nuts, and coconuts.

My friend recently reached out to me asking for some breakfast ideas to make while doing her elimination diet. This was no easy task as anything I came up with did not meet her dietary restrictions. There is a need for more allergy-friendly recipes and so I did some research to come up with an idea!

As a busy teacher always on the go, I knew that breakfast had to be quick with basic pantry ingredients. Eggs? No… my friend is not a fan of eggs dishes. Non-dairy yogurt? No…. they all either contain nuts, coconuts, or oats. Gluten-free French toast? Yes! The French toast can be made ahead and then toasted or microwaved during a busy morning on the go.

Can You Freeze French Toast? YES!

Think you don't have time to make French toast during the week? You can make it ahead and freeze it!

  • Arrange your cooked French toast on a single layer on a baking sheet.

  • Freeze for about 30 minutes.

  • Transfer to freezer-safe bags or containers.

  • Should last about 3-4 months in the freezer.

Jazz up your French toast with some fun toppings!

  • Sprinkle with chia seeds.

  • Top with bacon for a sweet and savory taste.

  • Add some nut or seed butter.

  • Top with fresh fruit or berry compote.

  • Use a multi-grain gluten-free bread for extra fiber and nutrients. I like this one.

My French Toast Recipe:

Ingredients:

Makes 4-6 servings

  • 2 eggs OR 2 flax/chia seed eggs*

  • 2/3 cup milk of choice

  • 1/2-1 tsp cinnamon to taste (I love cinnamon!)

  • 1 tsp vanilla extract

  • 4-6 slices gluten-free bread

Directions:

  1. In a large, shallow bowl or dish, mix together eggs, milk, cinnamon, and vanilla.

  2. Dunk each bread slice into mixture and allow to soak.

  3. Heat a frying pan over medium-high heat, add cooking fat of choice to pan.

  4. Fry each side of the bread until golden brown.

  5. Each side should take 3-4 minutes, but adjust to your stove settings.

*To make a flax or chia seeds egg: Mix 1 tablespoon of flax or chia seeds with 3 tablespoons of water. Let it sit 4-5 minutes to thicken. Use in your recipe. Makes 1 egg.
