Lunch box sushi

My son Winston attended summer camp for the first time this summer. It was only for three days a week for six weeks, but it was such a great experience for him! This was the first time for me learning how to pack a lunch box for a school environment and it was pretty overwhelming at first!

At home it’s easy to throw together some leftovers paired with fruit and make a quick lunch. For camp, I was so nervous about what to send with Winston. What foods are allowed? How big should I cut the pieces? Should I stick with packing all cold foods? Navigating the “away from home” lunch scene is no small task! 

What’s a busy parent to do? Besides falling into the same rotation of cold mac and cheese or some all-natural deli meat, I got creative. First on my to do list was get a fun lunch box (we’ll talk more about this one in a later post). Next up, a spill proof water cup, we like this one a lot and it has held true to being no spill. Last, go crazy with fun ideas! 

We love sushi, but it’s not exactly a budget friendly lunch option for summer camp lol! So....I took some all-natural deli meat, cheese, and matchstick carrots to make my own lunchbox sushi! Don’t be intimidated and think “you seriously want me to make sushi rolls for my kids lunch?” I promise, this will take max 5 minutes to make and your kids will love finding it in their lunchbox! Pair alongside fruits and veggies, throw in a favorite food like some crackers or veggie sticks and tada! Easy lunch!

Want to take this a step further?? Let your kiddies make their own lunchbox sushi! Parents - you slice the deli meats, cheese, and carrots, and let your kids assemble their own!

Ingredients:

  • 1 cucumber

  • 1 slice all-natural deli meat of your choice

  • 1 slice cheese of choice (thin sliced)

  • Handful of matchstick carrots

Directions: 

  • Slice cucumber into 1-inch slices.

  • Using a teaspoon, hollow out the center of each cucumber slice, leaving about 1/2 inch at the bottom.

  • Cut long strips of the deli meat and cheese and roll.

  • Stuff each cucumber slice with deli meat and cheese rolls and carrots until full. Pack in your child’s lunchbox and enjoy!
