Chocolate Avocado Pie

During my pregnancy, I wanted to enjoy dessert, but without loads of added sugar. I played around with simple pantry and fridge items incorporating all the foods that grow a healthy baby. This chocolate pie is so decadent and will fulfill the strongest chocolate craving.

The chocolate mousse filling is made with avocados which gives it a smooth and creamy texture. A simple crust is made from almonds and the pie is drizzled with almond butter and melted chocolate.

You can freeze the pie for later, but I doubt there will be any leftovers!

Chocolate Avocado Pie

Serves 8

Avocado pie recipe

Ingredients:

Chocolate Mousse:

  • 2 large, ripe Hass avocados

  • 1/4 cup coco powder or cacao powder

  • 3 T milk of choice

  • 1 tsp vanilla extract

  • 1/4 cup honey or maple syrup

Pie Crust:

  • 2 1/2 cups chopped almonds

  • 1/4 cup coconut oil, melted

  • 1/4 cup honey or maple syrup

  • 1/2 tsp vanilla extract

  • 1/4 tsp sea salt

Almond butter and chocolate chips to melt and drizzle

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit. To a food processor, add all of the ingredients for the pie crust (almonds through sea salt. Pulse until the crust comes together and all of the ingredients are sticky.

  2. Add the pie crust to a pie pan and use your fingers to push to the bottom and sides of the pie pan. Bake for 10-12 minutes, or until the almonds are lightly roasted and a light brown color.

  3. Cool the pie crust in the refrigerator or freezer.

  4. Wash your food processor and add the chocolate mousse ingredients to the food processor (avocados through honey or maple syrup).

  5. Process until the mousse has a smooth and creamy consistency. Add more milk to make a thinner consistency, add more sweetener of choice if you prefer the mousse sweeter.

  6. Add the chocolate mousse filling to the cooled pie crust. Microwave chocolate chips and drizzle chocolate and almond butter over the pie.

  7. Refrigerate 3 hours until the pie is set, serve and enjoy!

Leftovers freeze well and you can defrost a piece whenever you have a craving!
